Ingredients

  • 2 pounds boneless pork tenderloin
  • 1 cup orange juice (freshly squeezed)
  • 0.25 cup lime juice (freshly squeezed)
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves (minced)
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon orange zest
  • 2 tablespoons fresh cilantro (chopped for garnish)
  • 4 slices orange slices (optional, for garnish)

Directions

Step 1

In a medium bowl, whisk together orange juice, lime juice, olive oil, minced garlic, honey, soy sauce, cumin, smoked paprika, salt, black pepper, and orange zest to create a marinade.

Step 2

Place the pork tenderloins in a large resealable plastic bag or shallow dish and pour the marinade over the pork. Seal the bag (or cover the dish) and marinate in the refrigerator for at least 2 hours or up to 12 hours for best flavor.

Step 3

Preheat your oven to 375°F (190°C).

Step 4

Remove the pork from the marinade, reserving the marinade for later. Pat the pork dry with paper towels.

Step 5

Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of olive oil to the skillet and sear the pork on all sides until browned, about 3-4 minutes per side.

Step 6

Pour the reserved marinade into the skillet with the pork and transfer the skillet to the preheated oven.

Step 7

Roast the pork in the oven for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C) when checked with a meat thermometer.

Step 8

Remove the pork from the oven and let it rest for 5-10 minutes before slicing.

Step 9

Slice the pork into medallions and garnish with freshly chopped cilantro and optional orange slices.

Step 10

Serve warm with your favorite side dishes, such as roasted vegetables or a fluffy rice pilaf.
