Ingredients

  • 2 cups Mixed olives (variety of green and black)
  • 1 tablespoon Orange zest
  • 1 tablespoon Lemon zest
  • 3 cloves Garlic cloves, thinly sliced
  • 2 sprigs Fresh rosemary sprigs
  • 2 sprigs Fresh thyme sprigs
  • 0.5 teaspoon Crushed red pepper flakes
  • 0.5 cup Extra-virgin olive oil
  • 2 tablespoons Fresh orange juice
  • 1 tablespoon Fresh lemon juice
  • 0.25 teaspoon Sea salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Rinse and drain the olives, patting them dry with a paper towel to remove excess liquid.

Step 2

In a large mixing bowl, combine the orange zest, lemon zest, and thinly sliced garlic.

Step 3

Add the rosemary sprigs, thyme sprigs, and crushed red pepper flakes to the bowl.

Step 4

Gently stir in the olive oil, orange juice, and lemon juice to create the marinade.

Step 5

Season with sea salt and freshly ground black pepper to taste, mixing everything together well.

Step 6

Add the olives to the bowl and toss thoroughly to coat them evenly with the marinade.

Step 7

Transfer the marinated olives, along with all the marinade, into a sealable container or jar.

Step 8

Refrigerate for at least 12 hours (overnight is best) to allow the flavors to meld together. Stir or shake the container occasionally to ensure the olives are evenly coated.

Step 9

Before serving, let the olives come to room temperature for about 15 minutes. Discard any woody herb stems before plating.

Step 10

Serve the marinated olives as an appetizer or snack, alongside bread, cheese, or charcuterie.
