Ingredients

  • 450 grams Button mushrooms
  • 2 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 2 tablespoons Orange juice
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Red chili flakes (optional)
  • 1 teaspoon Zest of a lemon
  • 1 teaspoon Zest of an orange

Directions

Step 1

Clean the button mushrooms by gently wiping them with a damp paper towel. Trim any rough ends from the stems. If the mushrooms are large, cut them in half or quarters to ensure even cooking.

Step 2

Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Add the mushrooms and sauté for 5-7 minutes, stirring occasionally, until they begin to release their moisture and become tender.

Step 3

While the mushrooms cook, prepare the citrus marinade. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, orange juice, minced garlic, salt, black pepper, red chili flakes (if using), and the lemon and orange zest.

Step 4

Once the mushrooms are cooked, transfer them to a heatproof bowl and pour the citrus marinade over the warm mushrooms. Toss the mushrooms gently to ensure they are evenly coated with the marinade.

Step 5

Let the mushrooms marinate at room temperature for 15-20 minutes to absorb the flavors. Stir occasionally.

Step 6

Before serving, sprinkle the marinated mushrooms with fresh chopped parsley for garnish. Serve as a light appetizer, side dish, or topping for salads or toast.

Step 7

Enjoy your Citrus Marinated Mushrooms Cooking Light!
