Ingredients

  • 200 grams Feta cheese
  • 150 grams Mixed olives (Kalamata, green, or your choice)
  • 120 ml Extra virgin olive oil
  • 1 teaspoon Orange zest
  • 1 teaspoon Lemon zest
  • 1 clove Garlic clove
  • 3 sprigs Fresh thyme sprigs
  • 1 sprig Fresh rosemary sprigs
  • 0.5 teaspoons Red chili flakes
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Cut the feta cheese into 1-inch cubes and set aside.

If the olives are packed in brine, rinse them under cold water and drain well. Pat dry with a clean towel.

In a small mixing bowl, combine the extra virgin olive oil, orange zest, lemon zest, red chili flakes, salt, and black pepper. Stir to combine.
