Ingredients

  • 0.25 cup Fresh orange juice
  • 0.25 cup Fresh lemon juice
  • 0.75 cup Granulated sugar
  • 2 large Eggs
  • 2 large Egg yolks
  • 6 tablespoons Unsalted butter, cubed
  • 1 teaspoon Orange zest
  • 1 teaspoon Lemon zest

Directions

Step 1

In a medium-sized saucepan, combine the orange juice, lemon juice, granulated sugar, eggs, and egg yolks. Whisk the mixture thoroughly until it's well blended and smooth.

Step 2

Place the saucepan over low to medium heat and stir constantly with a heatproof silicone spatula or a wooden spoon. Be sure to scrape the sides and bottom of the pan to prevent the eggs from curdling.

Step 3

Once the mixture starts to thicken (about 10 minutes) and coats the back of the spoon, reduce the heat to low and add the cubed unsalted butter, one piece at a time. Stir each piece until it is completely melted and incorporated before adding the next.

Step 4

Remove the saucepan from heat and stir in the orange zest and lemon zest for an extra burst of flavor.

Step 5

Strain the curd through a fine-mesh sieve into a clean bowl to remove any lumps or cooked egg bits. This step ensures a silky-smooth texture.

Step 6

Allow the citrus curd to cool to room temperature, then cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the curd to prevent a skin from forming.

Step 7

Refrigerate the curd for at least 2 hours to set. Once chilled, it will be thick and ready to use.

Step 8

Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
