Directions

Step 1

Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper or foil for easy cleanup.

Step 2

Trim the ends of the Brussels sprouts and cut them in half. Peel and slice the carrots into sticks or rounds of similar size to ensure even cooking.

Step 3

Place the Brussels sprouts and carrots in a large mixing bowl. Drizzle with 1 tablespoon of olive oil, and season with half the salt and pepper. Toss well to coat.

Step 4

Spread the vegetables in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, flipping them halfway through, until tender and golden brown.

Step 5

While the vegetables are roasting, prepare the citrus glaze. In a small bowl, whisk together orange juice, lemon juice, honey, garlic, the remaining olive oil, and orange zest.

Step 6

Once the vegetables are done roasting, transfer them to a large serving bowl. Pour the citrus glaze over the top and gently toss to coat evenly.

Step 7

Taste and adjust seasoning with additional salt or pepper if needed. Serve immediately for a bright, delicious side dish.
