Ingredients

  • 4 medium-sized sweet potatoes
  • 0.5 cup orange juice
  • 2 tablespoons lemon juice
  • 0.5 cup brown sugar
  • 2 tablespoons honey
  • 3 tablespoons unsalted butter
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 whole zest of an orange
  • 0.25 cup chopped pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the sweet potatoes and slice them into 1/2-inch thick rounds.

Step 3

Arrange the sweet potato slices in a single layer in a greased 9x13-inch baking dish.

Step 4

In a small saucepan, combine the orange juice, lemon juice, brown sugar, honey, and butter. Heat over medium-low heat, stirring until the butter melts and the mixture is smooth.

Step 5

Stir in the ground cinnamon, ground nutmeg, salt, and orange zest into the sauce.

Step 6

Pour the citrus glaze evenly over the sweet potato slices in the baking dish.

Step 7

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Step 8

Remove the foil and spoon some of the glaze from the bottom of the dish over the top of the sweet potatoes.

Step 9

Continue baking uncovered for an additional 15 minutes, or until the sweet potatoes are tender and the glaze has thickened slightly.

Step 10

Optional: Sprinkle chopped pecans over the sweet potatoes during the last 5 minutes of baking for added crunch and flavor.

Step 11

Remove the sweet potatoes from the oven and let them cool slightly before serving. Serve warm as a side dish.
