Ingredients

  • 1 cup bulgur wheat
  • 2 cups water
  • 0.5 tsp salt
  • 1 orange
  • 1 grapefruit
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp honey
  • 0.25 cup (chopped) fresh parsley
  • 2 stalks (thinly sliced) green onion
  • 0.25 cup sunflower seeds
  • 0.25 tsp black pepper

Directions

Step 1

In a medium saucepan, bring 2 cups of water and 0.5 tsp of salt to a boil.

Stir in the bulgur wheat, cover the saucepan, and remove it from heat. Let it sit for 10 minutes, or until the bulgur has absorbed all the water. Fluff with a fork and set aside to cool.

While the bulgur cools, peel and segment the orange and grapefruit, removing any membranes. Cut the segments into bite-sized pieces and set them aside.
