Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 1 teaspoon orange zest
  • 0.5 teaspoon lemon zest
  • 0.25 cup orange juice
  • 0.5 teaspoon ground cinnamon
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 0.25 teaspoon salt
  • 2 tablespoons toasted slivered almonds
  • 2 tablespoons chopped fresh mint leaves
  • 2 tablespoons pomegranate seeds (optional)

Directions

Step 1

In a medium saucepan, bring the water to a boil.

Step 2

Once the water is boiling, remove it from heat and stir in the couscous, salt, and cinnamon. Cover the pan with a lid and let it sit for 5 minutes to absorb the water.

Step 3

While the couscous is resting, combine the orange juice, orange zest, lemon zest, honey, and olive oil in a small bowl. Whisk until well mixed.

Step 4

Once the couscous is ready, fluff it with a fork to separate the grains.

Step 5

Pour the citrus and honey mixture over the couscous and gently mix until evenly coated.

Step 6

Fold in the toasted slivered almonds, chopped mint leaves, and pomegranate seeds if using.

Step 7

Taste and adjust seasoning if needed, adding more salt or a drizzle of honey for additional sweetness.

Step 8

Serve warm or at room temperature, garnished with a few extra mint leaves or a sprinkle of almonds if desired.
