Preheat the oven to 400°F (200°C).
Wash and scrub the potatoes thoroughly. Using a fork, poke a few holes around each potato to prevent them from bursting in the oven.
Place the potatoes directly on the oven rack (or on a baking sheet) and bake for 50-60 minutes, or until they are tender when pierced with a knife.
Carefully remove the potatoes from the oven and let them cool for about 10 minutes (they will be hot!).
Using a small knife, cut a lengthwise slit across the top of each potato. Scoop out the inside of each potato into a mixing bowl, leaving a thin shell intact.
