Ingredients

  • 3 large russet potatoes
  • 1 puff pastry sheet
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup cream cheese
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon all-purpose flour

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

On a lightly floured surface, unfold the puff pastry sheet. Use a sharp knife or pizza cutter to slice it into 2-inch squares. Transfer the squares to the prepared baking sheet and bake for 12-15 minutes, or until golden brown and puffy. Remove from the oven and let cool.

Step 3

While the pastry bakes, peel the russet potatoes and slice them into thin circles about 1/4-inch thick. Pat the slices dry with a paper towel.

Step 4

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the potato slices in a single layer (work in batches if necessary) and cook for 3-4 minutes per side, or until golden brown and crispy. Sprinkle with a pinch of salt and set aside on a plate lined with paper towels to drain excess oil.

Step 5

In a small mixing bowl, combine the cream cheese, chopped dill, parsley, garlic powder, salt, and black pepper. Mix until smooth and creamy. Transfer the mixture to a piping bag or use a spoon for spreading.

Step 6

To assemble, pair each puff pastry square with a crispy potato circle. Spread or pipe the herb cream cheese onto the center of each pastry square and top with a potato circle. Add a dollop more of cream cheese, if desired, for aesthetic appeal or an extra boost of flavor.

Step 7

Serve immediately or at room temperature. Enjoy the delightful combination of crisp, buttery, and creamy textures!
