Ingredients

  • 4 links Italian sausage (mild or spicy)
  • 2 tablespoons Olive oil

  • 3 Garlic cloves, minced
  • 2 Carrot, diced
  • 2 Celery stalks, diced
  • 1 Zucchini, diced
  • 28 ounces Canned crushed tomatoes
  • 2 cups Chicken or vegetable broth
  • 15 ounces Cannellini beans, drained and rinsed
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 1 cup Ditalini pasta or small shell pasta
  • 2 tablespoons Fresh parsley, chopped (for garnish)
  • 0.25 cup Grated Parmesan cheese (for garnish)

Directions

Step 1

Heat a large, heavy-bottomed pot or Dutch oven over medium heat. Add the olive oil.

Step 2

Remove the sausage from its casing (if applicable) and add the sausage to the pot. Cook for about 5-7 minutes, breaking it into small pieces with a wooden spoon, until browned and cooked through. Remove the sausage with a slotted spoon and set aside.
