Ingredients

  • 12 oz rotini pasta
  • 2 pieces chicken breast, boneless and skinless
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta is cooking, season the chicken breasts with salt, black pepper, and half of the Italian seasoning.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown and fully cooked (internal temperature of 165°F/74°C). Remove the chicken from the skillet and let rest for 5 minutes before slicing into bite-sized pieces.
