Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.25 teaspoons salt
  • 1 cups plain yogurt
  • 0.5 cups unsalted butter, melted and cooled
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 tablespoons brown sugar (for topping)
  • 0.5 teaspoons ground cinnamon (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt until well combined.

Step 3

In a separate medium-sized bowl, mix the plain yogurt, melted butter, eggs, and vanilla extract. Stir until smooth and well blended.

Step 4

Create a well in the center of the dry ingredients and pour in the wet ingredients. Fold gently with a spatula until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 5

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 6

In a small bowl, stir together the brown sugar and ground cinnamon for the topping.

Step 7

Sprinkle the cinnamon-sugar mixture evenly over the top of each muffin before baking.

Step 8

Bake the muffins in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Step 9

Remove the muffin tin from the oven and allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to 3 days.
