Ingredients

  • 240 grams all-purpose flour
  • 170 grams unsalted butter (cold, cubed)
  • 50 grams granulated sugar
  • 0.5 teaspoons salt
  • 60 milliliters ice water
  • 2 teaspoons ground cinnamon
  • 50 grams light brown sugar
  • 1 egg (beaten, for egg wash)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

Step 2

Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.

Step 3

Gradually add the ice water, 1 tablespoon at a time, and mix until the dough just comes together. Do not overmix.

Step 4

Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 5

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 6

On a lightly floured surface, roll out the chilled dough to a ½ cm (1/4 inch) thickness.

Step 7

Combine the light brown sugar and ground cinnamon in a small bowl.

Step 8

Brush the rolled-out dough with the beaten egg, then evenly sprinkle the cinnamon-sugar mixture over the top.

Step 9

Using a pizza cutter or sharp knife, cut the dough into thin strips about 1 cm wide and 10-12 cm long.

Step 10

Twist each strip gently to create a spiral shape and place them on the prepared baking sheet, slightly spaced apart.

Step 11

Bake for 16-18 minutes or until the Cinnamon Twigs are golden and crisp.

Step 12

Allow to cool completely on a wire rack before serving.
