Ingredients

  • 1.5 cups All-purpose flour
  • 3 tablespoons Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 cup Sour cream
  • 0.5 cups Whole milk
  • 2 Large eggs
  • 3 tablespoons Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 0.25 cups Brown sugar
  • 1 teaspoon Cinnamon
  • 2 tablespoons Cold unsalted butter, cubed
  • 2 tablespoons All-purpose flour (for streusel)
  • 2 tablespoons Powdered sugar (optional, for garnish)

Directions

Step 1

In a medium bowl, mix together the flour, granulated sugar, baking powder, baking soda, and salt. Set aside.

Step 2

In a large bowl, whisk together the sour cream, milk, eggs, melted butter, and vanilla extract until smooth.

Step 3

Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix; the batter should be lumpy.

Step 4

To make the cinnamon streusel, combine brown sugar, cinnamon, cold cubed butter, and 2 tablespoons of flour in a small bowl. Use a fork or your fingers to blend until the mixture resembles coarse crumbs.

Step 5

Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

Step 6

Pour 1/4 cup of pancake batter onto the skillet. Immediately sprinkle 1 tablespoon of the prepared streusel over the top of the batter.

Step 7

Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancake carefully and cook for an additional 1-2 minutes, or until golden brown. Repeat with the remaining batter and streusel.

Step 8

Serve the pancakes warm, dusted with powdered sugar if desired. Add a drizzle of maple syrup for extra sweetness.
