Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Light brown sugar
  • 2.5 teaspoons Baking powder
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.75 cup Apple cider
  • 0.5 cup Unsalted butter (melted and cooled)
  • 2 large Eggs
  • 1 teaspoon Pure vanilla extract
  • 1 cup Diced apple (peeled, finely chopped)
  • 0.5 cup All-purpose flour (for streusel)
  • 0.25 cup Granulated sugar (for streusel)
  • 0.25 cup Light brown sugar (for streusel)
  • 1 teaspoon Ground cinnamon (for streusel)
  • 0.25 cup Unsalted butter (cold, diced, for streusel)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners, or lightly grease the tin with nonstick cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, light brown sugar, baking powder, ground cinnamon, and salt.

Step 3

In a medium mixing bowl, combine the apple cider, melted butter, eggs, and vanilla extract. Whisk until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and fold together using a spatula. Be careful not to overmix; the batter should be slightly lumpy.

Step 5

Gently fold in the diced apple until evenly distributed.

Step 6

Divide the batter evenly between the prepared muffin cups, filling each about 3/4 full.

Step 7

To make the streusel topping, combine the flour, granulated sugar, light brown sugar, and ground cinnamon in a small bowl. Add the cold diced butter and use a fork or pastry cutter to blend the mixture until it becomes crumbly.

Step 8

Sprinkle the streusel topping evenly over the muffin batter.

Step 9

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Step 10

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve warm or at room temperature. Store any leftovers in an airtight container at room temperature for up to 3 days.
