Ingredients

  • 250 g Almond flour
  • 200 g Powdered sugar
  • 2 tsp Ground cinnamon
  • 2 large Egg whites
  • 50 g Granulated sugar
  • 1 tsp Vanilla extract
  • 1 tsp Lemon juice

Directions

Step 1

Preheat your oven to 150°C (300°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, sift together almond flour, powdered sugar, and ground cinnamon. Mix well to combine.

Step 3

In another bowl, use a hand or stand mixer to beat the egg whites on medium speed until frothy.

Step 4

Slowly add the granulated sugar to the egg whites while continuing to beat on high speed. Beat until stiff peaks form and the meringue is glossy.

Step 5

Remove 3 tablespoons of the meringue mixture and set aside for later use as the glaze.

Step 6

Gently fold the sifted almond flour mixture, vanilla extract, and lemon juice into the remaining meringue until a sticky dough forms. Be careful not to deflate the meringue too much.

Step 7

Place the dough between two sheets of parchment paper and roll it out to about 1 cm (⅜ inch) thickness.

Using a star-shaped cookie cutter, cut out cookies and transfer them to the prepared baking sheet, spacing them slightly apart.

Use a small brush or spoon to spread the reserved meringue glaze evenly over the top of each cookie.

Bake in the preheated oven for 12-15 minutes, or until the glaze is set and the cookies are slightly firm but not browned. Remove from the oven and let cool on the baking sheet.
