  • 1.5 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter, softened
  • 1 cup Sour cream
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 0.75 cups Brown sugar
  • 2 teaspoons Ground cinnamon
  • 0.5 cups All-purpose flour (for topping)
  • 0.25 cups Granulated sugar (for topping)
  • 0.25 cups Unsalted butter, melted (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or line it with parchment paper.

Step 2

In a medium bowl, whisk together the 2.5 cups of all-purpose flour, 1.5 cups of granulated sugar, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter with a hand or stand mixer until light and fluffy. Beat in the eggs, one at a time, followed by the sour cream and vanilla extract until smooth.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 5

In a small bowl, combine the brown sugar and ground cinnamon to make the filling. Set aside.

Step 6

For the crumb topping, mix together 0.5 cups of flour, 0.25 cups of granulated sugar, and the melted butter until crumbly. Set aside.

Step 7

Spread half of the batter into the prepared baking dish, smoothing it out with a spatula. Sprinkle the cinnamon-sugar filling evenly over this layer.

Step 8

Spread the remaining batter over the filling layer, carefully smoothing it out with a spatula.

Step 9

Sprinkle the crumb topping evenly over the top of the batter.

Step 10

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Step 11

Allow the coffee cake to cool in the pan for at least 15 minutes before slicing and serving.

Step 12

Enjoy the coffee cake warm or at room temperature. Perfect with coffee or tea!
