Ingredients

  • 1 cup rolled oats
  • 0.5 cup pumpkin puree
  • 0.5 cup blueberries
  • 1 cup milk (dairy or plant-based)
  • 0.5 cup water
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup
  • 0.5 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoons chopped walnuts or pecans (optional)
  • 1 tablespoon pumpkin seeds (optional, for garnish)

Directions

Step 1

In a medium-sized saucepan, combine the rolled oats, milk, water, and pumpkin puree.

Step 2

Place the saucepan over medium heat and stir to combine the ingredients.

Step 3

Add the ground cinnamon, a pinch of salt, and vanilla extract to the mixture, stirring well.

While the oats cook, rinse and pat dry the blueberries. Set aside.

Step 6

Once the oatmeal has reached your desired consistency, stir in the maple syrup and half of the blueberries.

Step 7

Divide the oatmeal evenly into two bowls.

Step 8

Top each bowl with the remaining blueberries, chopped walnuts or pecans (if using), and a sprinkle of pumpkin seeds for garnish.

Step 9
