Ingredients

  • 2.5 cups All-purpose flour
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 1 cup Unsalted butter (softened)
  • 1 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar
  • 0.25 cup Mini chocolate chips (for eyes and nose)

Directions

Step 1

In a medium bowl, whisk together the flour, cinnamon, baking powder, and salt. Set aside.

Step 2

In a large mixing bowl, use an electric mixer to cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the egg and vanilla extract to the butter mixture and beat until well combined.

Step 4

Gradually mix the dry ingredients into the wet ingredients until a soft dough forms. Cover the dough and refrigerate for 1 hour to make it easier to handle.

Step 5

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 6

On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use polar bear-shaped cookie cutters to cut out the shapes and place them onto the prepared baking sheets, about 1 inch apart.

Step 7

If desired, lightly dust the cookies with powdered sugar to give them a snowy look.

Step 8

Press mini chocolate chips into the dough to create the polar bear’s eyes and nose.

Step 9

Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Do not overbake to keep the cookies soft.

Step 10

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Store the cookies in an airtight container at room temperature for up to one week.
