In a large bowl, combine the rolled oats and boiling water. Let sit for 10 minutes to soften the oats.
Once the oats have cooled slightly, stir in the milk, melted butter, and honey until well combined.
Add the egg and vanilla extract to the oat mixture and mix until smooth.
In a separate large bowl, mix together all-purpose flour, yeast, salt, ground cinnamon, and brown sugar.
