Ingredients

  • 1 cup Old-fashioned rolled oats
  • 1 cup Boiling water
  • 0.25 cup Whole milk
  • 0.25 cup Unsalted butter (melted)
  • 0.25 cup Honey
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2.5 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1 teaspoon Salt
  • 1.5 teaspoons Ground cinnamon
  • 2 tablespoons Brown sugar
  • 1 teaspoon Butter (for greasing pan)
  • 2 tablespoons Optional: Additional oats (for topping)

Directions

Step 1

In a large bowl, combine the rolled oats and boiling water. Let sit for 10 minutes to soften the oats.

Step 2

Once the oats have cooled slightly, stir in the milk, melted butter, and honey until well combined.

Step 3

Add the egg and vanilla extract to the oat mixture and mix until smooth.

Step 4

In a separate large bowl, mix together all-purpose flour, yeast, salt, ground cinnamon, and brown sugar.

Step 5

Make a well in the center of the dry ingredients and pour in the wet oat mixture. Stir until a dough begins to form.

Step 6

Turn the dough onto a lightly floured surface and knead for 8-10 minutes, or until the dough is smooth and slightly elastic. If the dough is too sticky, add small amounts of flour as needed.

Step 7

Grease a large bowl with a teaspoon of butter, place the dough inside, and cover with a clean kitchen towel. Let rise in a warm place for about 1 hour, or until the dough has doubled in size.

Step 8

Once risen, punch the dough down to release air, then shape it into a loaf. Place the dough into a greased 9x5-inch loaf pan.

Step 9

If desired, sprinkle additional rolled oats on top of the loaf for texture.

Step 10

Cover the loaf pan with a kitchen towel and let the dough rise a second time for 30 minutes, or until slightly puffed above the rim of the pan.

Step 11

Preheat your oven to 375°F (190°C).

Step 12

Bake the bread in the preheated oven for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.

Step 13

Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

Step 14

Serve plain, toasted, or with your favorite spread. Enjoy!
