Ingredients

  • 1 cup All-purpose flour
  • 2 tablespoons Unsweetened cocoa powder
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Instant coffee granules
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut sugar (or brown sugar)
  • 0.5 cup Unsweetened almond milk (or any dairy-free milk)
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dairy-free chocolate chips

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease four ramekins with coconut oil and set them on a baking tray.

Step 2

In a large mixing bowl, whisk together the flour, cocoa powder, ground cinnamon, instant coffee granules, baking powder, baking soda, salt, and coconut sugar until well combined.

Step 3

In a separate bowl, mix the almond milk, melted coconut oil, and vanilla extract until the wet ingredients are fully incorporated.

Step 4

Gradually add the wet ingredients to the dry ingredients and stir until you have a smooth, lump-free batter.

Step 5

Fill each greased ramekin halfway with the batter. Add a heaping tablespoon of dairy-free chocolate chips into the center of each ramekin, then spoon additional batter on top to cover the chocolate chips, filling the ramekins about three-quarters full.

Step 6

Place the ramekins on the baking tray and bake for 12 minutes, or until the edges of the cakes are set but the center remains slightly soft.

Step 7

Remove from the oven and let the ramekins cool for 2-3 minutes. Carefully run a knife around the edges of the cakes to loosen them, then invert them onto plates if desired.

Step 8

Serve warm with a dusting of powdered sugar, a scoop of dairy-free ice cream, or your favorite fruit topping.
