  • 0.5 cups Light corn syrup
  • 0.25 cups Water
  • 1 teaspoon Cinnamon oil
  • 4 drops Red food coloring
  • 12 pieces Lollipop sticks
  • 1 as needed Nonstick cooking spray

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper or a silicone mat, and lightly spray it with nonstick cooking spray.

Step 2

Arrange the lollipop sticks on the prepared sheet, spacing them at least 2 inches apart.

Step 3

In a medium saucepan, combine granulated sugar, light corn syrup, and water. Stir gently to combine.

Step 4

Place the saucepan over medium heat, and bring the mixture to a boil without stirring.

Step 5

Using a candy thermometer, cook the mixture until it reaches 300°F (hard crack stage). This process takes around 15 minutes, so monitor the temperature closely.

Step 6

Once the candy reaches 300°F, immediately remove the saucepan from the heat.

Step 7

Working quickly, stir in the cinnamon oil and red food coloring. Be cautious, as the mixture is extremely hot and may release steam when adding the cinnamon oil.

Step 8

Carefully spoon small amounts of the candy mixture over the top of each lollipop stick on the prepared baking sheet, forming circular lollipop shapes.

Allow the lollipops to cool and harden completely at room temperature, about 20-30 minutes.
