Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 3 cups whole milk
  • 0.3333333333333333 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 1 tablespoon unsalted butter
  • 0.25 cup raisins (optional)
  • 0.25 teaspoon ground nutmeg (optional, for garnish)

Directions

Step 1

Rinse the jasmine rice under cold running water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, bring the water to a boil over medium-high heat. Stir in the rinsed jasmine rice, then reduce the heat to low. Cover and simmer for 10 minutes or until the water is absorbed.

Step 3

Add the milk, granulated sugar, and salt to the saucepan with the partially cooked rice. Stir well to combine and increase the heat to medium.

Step 4

Cook the mixture, stirring frequently, until it begins to thicken and the rice is tender. This should take about 15 minutes. Be sure to stir often to prevent the rice from sticking to the bottom of the pan.

Step 5

Once the pudding has thickened, stir in the ground cinnamon, vanilla extract, and unsalted butter. If using raisins, stir them in at this stage as well.

Step 6

Cook for an additional 5 minutes, stirring until the pudding reaches your desired consistency. Keep in mind that it will thicken further as it cools.

Step 7

Remove the saucepan from heat and let the rice pudding cool for 5-10 minutes. It can be served warm or chilled, depending on your preference.

Step 8

Optional: Sprinkle with a pinch of ground nutmeg for an extra layer of flavor before serving.
