Ingredients

  • 115 grams unsalted butter
  • 100 grams light brown sugar
  • 80 grams honey
  • 2 teaspoons vanilla extract
  • 1 whole large egg
  • 150 grams rolled oats
  • 130 grams all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 100 grams raisins or chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, beat the unsalted butter, light brown sugar, and honey together until smooth and creamy, about 2 minutes.

Step 3

Add the vanilla extract and the egg to the butter mixture, and beat until fully combined.

Step 4

In a separate bowl, whisk together the rolled oats, all-purpose flour, ground cinnamon, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Step 6

If desired, gently fold in raisins or chocolate chips for added texture and flavor.

Step 7

Using a tablespoon or a small cookie scoop, drop mounds of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 9-11 minutes, or until the edges are lightly golden and the centers look set.

Step 9

Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Serve the cookies warm or store in an airtight container at room temperature for up to a week.
