  • 0.6667 cup Light corn syrup
  • 0.75 cup Water
  • 0.5 teaspoon Cinnamon oil (food-grade)
  • 1 drop Red food coloring (optional)
  • 0.25 cup Powdered sugar

Directions

Step 1

Grease a large baking sheet or line it with parchment paper. Lightly dust the surface with powdered sugar to prevent the candy from sticking.

In a medium, heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water. Stir to dissolve the sugar completely.

Attach a candy thermometer to the side of the saucepan, ensuring that the bulb is submerged but not touching the bottom of the pot.

Place the saucepan over medium heat and bring the mixture to a boil without stirring. Continue cooking until the temperature reaches 300°F (hard-crack stage). This will take about 25-30 minutes. Watch carefully to avoid burning.

Once the mixture reaches 300°F, immediately remove it from heat and allow it to sit for about 30 seconds to let the bubbles subside.
