Ingredients

  • 3 cups rolled oats
  • 1 cup sliced almonds
  • 1 cup pecan halves
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup honey
  • 0.25 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, sliced almonds, and pecan halves.

Step 3

Add the ground cinnamon and salt to the oat mixture, stirring well to ensure even distribution.

Step 4

In a small saucepan over low heat, melt the coconut oil. Once melted, remove from heat and stir in the honey and vanilla extract until fully combined.

Step 5

Pour the wet ingredients mixture over the dry ingredients in the large mixing bowl, and mix thoroughly until the oats and nuts are well coated with the honey mixture.

Step 6

Spread the granola mixture evenly onto the prepared baking sheet.

Step 7

Bake in the preheated oven for 25-30 minutes, stirring halfway through to ensure even cooking. The granola is done when it is golden brown and fragrant.

Step 8

Remove the baking sheet from the oven and allow the granola to cool completely on the tray to achieve maximum crunch.

Step 9

Once cooled, stir in the dried cranberries.

Step 10

Store the cinnamon granola in an airtight container for up to two weeks at room temperature.
