Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 teaspoons Ground cinnamon
  • 0.75 cups Whole milk
  • 0.25 cups Unsalted butter (melted and cooled)
  • 1 large Egg
  • 1 teaspoons Vanilla extract
  • 0.5 cups Unsalted butter (for coating)
  • 0.75 cups Granulated sugar (for coating)
  • 1 tablespoons Ground cinnamon (for coating)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups with non-stick spray.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon to combine.

Step 3

In a separate medium mixing bowl, whisk together the milk, melted butter, egg, and vanilla extract until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and gently stir with a spatula or wooden spoon until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 5

Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.

Step 6

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

While the muffins are baking, prepare the cinnamon sugar coating. In a small bowl, melt the butter for coating. In another small bowl, mix the granulated sugar and cinnamon together.

Step 8

Once the muffins are done baking, remove them from the oven and allow them to cool in the muffin tin for about 5 minutes. Then transfer the muffins to a wire rack.

Step 9

While the muffins are still warm, dip the tops of each muffin into the melted butter, and then roll or sprinkle them in the cinnamon sugar mixture to coat evenly.

Step 10

Allow the muffins to cool slightly before serving. Enjoy your warm and cozy Cinnamon Doughnut Muffins!
