Ingredients

  • 2 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon instant coffee granules
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter (cold and cubed)
  • 0.5 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 egg
  • 0.5 cup powdered sugar
  • 2 tablespoons strong brewed coffee (cooled)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, coffee granules, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

In a small bowl, whisk together the milk, vanilla extract, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
