Ingredients

  • 800 ml Full-fat coconut milk
  • 100 g Granulated sugar
  • 2 tsp Vanilla extract
  • 2 tsp Ground cinnamon
  • 80 g Brown sugar
  • 2 tbsp Cornstarch
  • 2 tbsp Cold water
  • 0.25 tsp Sea salt

Directions

Step 1

In a medium saucepan, combine the coconut milk, granulated sugar, and sea salt over medium heat. Stir occasionally until the sugar fully dissolves, about 3-4 minutes. Do not let the mixture boil.

Step 2

In a small bowl, mix the cornstarch with the cold water until thoroughly combined to create a slurry.

Step 3

Slowly pour the cornstarch slurry into the saucepan while stirring constantly. Continue cooking on medium heat for 4-5 minutes until the mixture thickens slightly and coats the back of a spoon.

Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool completely to room temperature before chilling it in the refrigerator for at least 2 hours (preferably overnight).

In a small bowl, combine the brown sugar and ground cinnamon to create the cinnamon swirl mixture. Set aside.
