  • 4 pieces Boneless, skinless chicken thighs

  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 1.5 cups Chicken broth
  • 1 cup Couscous
  • 0.5 cup Dried apricots, diced
  • 0.5 cup Golden raisins
  • 2 tablespoons Fresh parsley, chopped (optional garnish)

Directions

Step 1

In a small bowl, mix together the cinnamon, cumin, paprika, salt, and black pepper to create a spice rub.

Rub the spice mixture evenly over both sides of the chicken thighs.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear for 3-4 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.
