Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 2 teaspoons Cinnamon
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cup Unsalted butter (softened)
  • 1 cup Milk (room temperature)
  • 2 whole Eggs (large, room temperature)
  • 2 teaspoons Vanilla extract
  • 2 tablespoons Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, granulated sugar, brown sugar, cinnamon, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter using a hand mixer or stand mixer until light and fluffy.

Step 4

Add the eggs one at a time to the butter, mixing well after each addition. Then mix in the vanilla extract.

Step 5

Alternate adding the dry ingredients and milk to the wet ingredients, starting and ending with the dry ingredients. Mix on low speed until just combined. Be sure not to overmix.

Step 6

Pour the batter into the prepared cake pan, spreading it out evenly with a spatula.

Step 7

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 8

Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 9

For an optional finishing touch, dust the top of the cooled cake with powdered sugar before serving.

Step 10

Slice and enjoy your homemade cinnamon cake!
