Ingredients

  • 2 cups All-purpose flour
  • 0.75 cup Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter (melted and slightly cooled)
  • 1 cup Buttermilk
  • 1 unit Large egg
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Cinnamon sugar (for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

Step 3

In a separate medium bowl, whisk together the melted butter, buttermilk, egg, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently mix with a spatula until just combined. Be careful not to overmix; the batter may be slightly lumpy, and that's okay.

Step 5

Evenly divide the batter among the 12 muffin cups, filling each about two-thirds full.

Step 6

Sprinkle the tops of each muffin generously with cinnamon sugar.

Step 7

Bake the muffins in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely or enjoy warm.
