Ingredients

  • 227 grams Unsalted butter
  • 150 grams Granulated sugar
  • 50 grams Brown sugar
  • 1 large Egg
  • 2 teaspoons Vanilla extract
  • 300 grams All-purpose flour
  • 2 teaspoons Ground cinnamon
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat the oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, beat the unsalted butter, granulated sugar, and brown sugar together until the mixture is light and fluffy. This should take about 3-4 minutes using an electric mixer.

Step 3

Add the egg and vanilla extract to the butter mixture and continue beating until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, ground cinnamon, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms. Do not overmix.

Step 6

Using a cookie scoop or a tablespoon, portion out small dough balls (about 1 tablespoon each) and place them onto the prepared baking sheets, spacing them about 5 cm apart.

Step 7

Flatten each ball slightly using the back of a spoon or your palm.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown. Avoid overbaking to keep them tender in the center.

Step 9

Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to one week. Enjoy these buttery, cinnamon-infused treats!
