Ingredients

  • 240 ml Whole milk
  • 75 g Unsalted butter
  • 50 g Granulated sugar
  • 2.25 tsp Active dry yeast
  • 450 g All-purpose flour
  • 0.5 tsp Salt
  • 2 large Eggs
  • 150 g Brown sugar
  • 2 tbsp Cinnamon
  • 100 g Cream cheese
  • 100 g Powdered sugar
  • 1 tsp Vanilla extract
  • 2 tbsp Milk (for glaze)

Directions

Step 1

In a small saucepan, warm the milk over medium heat until it's just warm (40–45°C or 105–115°F). Do not boil. Remove from heat and mix in the sugar and yeast. Let sit for 5–10 minutes until frothy, indicating the yeast is activated.

Step 2

Melt 50g of the butter and let it cool slightly. In a large bowl, combine the yeast mixture, melted butter, salt, and eggs. Gradually add the flour, mixing until a dough forms.

Step 3

Turn the dough out onto a floured surface and knead for about 8–10 minutes until smooth and elastic. Place the kneaded dough into a greased bowl, cover with a damp towel, and let it rise in a warm spot for 1–1.5 hours, or until doubled in size.

While the dough is rising, prepare the cinnamon filling. In a small bowl, mix together the brown sugar and cinnamon. Melt the remaining 25g of butter and set aside.

To prepare the cream cheese glaze, beat the cream cheese, powdered sugar, vanilla extract, and 2 tablespoons of milk together until smooth and spreadable.
