  • 14.5 ounces canned diced tomatoes
  • 2 cups beef or chicken stock
  • 2 tablespoons honey
  • 0.5 cup dried apricots, halved
  • 0.25 cup slivered almonds, toasted
  • 0.25 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large tagine or heavy-bottomed pot over medium-high heat.

Season the beef cubes with salt and black pepper. Working in batches, brown the beef on all sides, about 2-3 minutes per batch. Remove the beef and set aside.

Lower the heat to medium and add the remaining 1 tablespoon of olive oil. Stir in the diced onion and cook until softened, about 5 minutes.
