Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 0.75 cup brown sugar, packed
  • 0.25 cup granulated sugar
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 apples, peeled, cored, and diced (about 2 medium apples)
  • 1 teaspoon lemon juice

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, rolled oats, brown sugar, granulated sugar, ground cinnamon, baking powder, and salt.

Step 3

Pour the melted butter and vanilla extract into the dry ingredients. Stir until the mixture becomes evenly moist and crumbly.

Step 4

In a separate small bowl, toss the diced apples with lemon juice to prevent browning.

Step 5

Press two-thirds of the crumb mixture evenly into the prepared pan to form the base layer.

Step 6

Spread the diced apples over the base layer, ensuring an even distribution.

Step 7

Sprinkle the remaining crumb mixture over the apples, pressing it down gently to create a crumb topping.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the apples are tender.

Step 9

Remove the pan from the oven and allow it to cool completely on a wire rack.

Step 10

Once cooled, use the parchment paper overhang to lift the bars from the pan. Cut into 12 equal squares or bars.

Step 11

Serve as is, or optionally, drizzle with icing or serve with a scoop of vanilla ice cream.
