Ingredients

  • 250 grams Almond flour
  • 200 grams Granulated sugar
  • 2 teaspoons Ground cinnamon
  • 3 large Egg whites
  • 1 teaspoon Almond extract
  • 50 grams Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 170°C (340°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, granulated sugar, and ground cinnamon. Whisk together until evenly mixed.

Step 3

In a separate bowl, whisk the egg whites until soft peaks form. This step can be done by hand or with an electric mixer.

Step 4

Gently fold the beaten egg whites into the dry mixture using a spatula. Be careful not to deflate the egg whites. Stir in the almond extract until the mixture forms a sticky dough.

Step 5

Scoop small portions of the dough (about 1 tablespoon each) and roll them into balls with your hands. For less stickiness, slightly dampen your hands with water.

Step 6

Place the dough balls onto the prepared baking sheets, about 2 inches apart. Lightly flatten each ball with the palm of your hand.

Step 7

Dust the tops of the cookies generously with powdered sugar.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the cookies have set but remain soft on the inside. Avoid overbaking to ensure a chewy texture.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the Cinnamon Amaretti alongside coffee or tea, or store them in an airtight container at room temperature for up to a week.
