Ingredients

  • 2 cups Rolled oats
  • 1 cup Almond flour
  • 2 tablespoons Chia seeds
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 2 Ripe bananas, mashed
  • 2 Eggs
  • 0.25 cup Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 0.5 cup Unsweetened almond milk
  • 1 cup Fresh or frozen blueberries
  • 0.5 cup Chopped nuts (e.g., walnuts, pecans, or almonds)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper or grease it lightly.

Step 2

In a large mixing bowl, combine the dry ingredients: rolled oats, almond flour, chia seeds, baking powder, ground cinnamon, and salt. Stir to mix well.

Step 3

In a separate bowl, mash the ripe bananas until smooth. Add the eggs, honey or maple syrup, vanilla extract, and almond milk. Whisk until fully combined.

Step 4

Pour the wet ingredients into the bowl of dry ingredients. Stir until everything is evenly incorporated.

Step 5

Gently fold in the blueberries and chopped nuts, being careful not to overmix, especially if using fresh blueberries to avoid breaking them.

Step 6

Pour the batter into the prepared baking dish and smooth the top with a spatula.

Step 7

Bake in the preheated oven for 25–30 minutes, or until the squares are golden on top and a toothpick inserted into the center comes out clean.

Step 8

Remove from the oven and let the breakfast squares cool completely in the baking dish before slicing into 8 squares.

Step 9

Store the squares in an airtight container in the refrigerator for up to 5 days or wrap individually and freeze for up to 2 months. Reheat in the microwave for 15–20 seconds if desired.
