Ingredients

  • 4 medium zucchini
  • 1 medium yellow onion
  • 3 cloves garlic cloves
  • 2 tablespoons olive oil
  • 1.5 cups shredded cheddar cheese
  • 0.5 cups parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 0.5 cups milk
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon butter

Directions

Step 1

Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter and set aside.

Step 2

Wash and trim the zucchini, then slice them into thin rounds about 1/4 inch thick.

Step 3

Peel and finely chop the yellow onion. Mince the garlic cloves.

Step 4

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until fragrant and translucent.

Step 5

Add the zucchini slices to the skillet and cook for 5-7 minutes until slightly softened. Remove from heat and allow to cool for a few minutes.

Step 6

In a large mixing bowl, whisk together the eggs, milk, Italian seasoning, salt, and black pepper.

Step 7

Gradually stir in the cooked zucchini mixture, shredded cheddar cheese, and half of the parmesan cheese into the egg mixture, ensuring everything is well combined.

Step 8

Pour the mixture into the prepared baking dish, spreading it out evenly.

Step 9

Top the casserole with breadcrumbs and the remaining parmesan cheese for a golden, crispy crust.

Step 10

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the casserole is set in the center.

Step 11

Allow the casserole to cool for 5-10 minutes before serving. Enjoy!
