Ingredients

  • 2 pieces Chicken breasts
  • 2 tablespoons Olive oil

  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 cup Black beans
  • 1 cup Corn kernels
  • 1 large Avocado
  • 0.5 medium Red onion
  • 0.5 cup Cilantro leaves
  • 3 tablespoons Lime juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Ground cumin (for dressing)
  • 2 tablespoons Greek yogurt
  • 1 cup Tortilla strips

Directions

Step 1

Preheat a skillet over medium heat and add 1 tablespoon of olive oil.

Season both sides of the chicken breasts with chili powder, cumin, garlic powder, salt, and black pepper.

Cook the chicken breasts in the skillet for about 6–7 minutes per side until fully cooked. Remove from heat and let rest for 5 minutes before slicing.
