  • 8 cups beef broth
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 3 small garlic cloves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 whole bay leaves

Directions

Step 1

Heat the olive oil in a large stockpot over medium-high heat.

Season the beef stew meat with salt and pepper, then add to the pot. Sear the beef on all sides until browned, about 5-6 minutes. Remove the beef from the pot and set aside.

Add the diced onion to the pot and sauté until softened, about 3-4 minutes.
