Ingredients

  • 15 oz (1 can) Black beans
  • 15 oz (1 can) Sweet corn kernels
  • 1.5 cups Cherry tomatoes
  • 0.5 cup (diced) Red onion
  • 0.25 cup (chopped) Cilantro
  • 1 small (seeded and minced) Jalapeño pepper
  • 2 tbsp Lime juice
  • 1 tbsp Olive oil
  • 0.5 tsp Garlic powder
  • 0.5 tsp Ground cumin
  • 0.5 tsp (or to taste) Salt
  • 0.25 tsp (or to taste) Black pepper

Directions

Step 1

Rinse and drain the black beans thoroughly in a colander to remove excess sodium.

Step 2

Drain the canned sweet corn and transfer it to the mixing bowl with the black beans.

Step 3

Slice the cherry tomatoes into small bite-sized pieces and add them to the bowl.

Step 4

Dice the red onion into small pieces and add it to the mixture.

Step 5

Finely chop the cilantro and stir it in.

Step 6

Seed and mince the jalapeño. Adjust the quantity based on your desired level of spiciness, then add it to the bowl.

Step 7

In a small bowl, whisk together the lime juice, olive oil, garlic powder, ground cumin, salt, and black pepper to make the dressing.

Step 8

Pour the dressing over the black bean and corn mixture and gently toss to combine all ingredients evenly.

Step 9

Taste and adjust seasoning with additional salt or lime juice if needed.

Step 10

Chill the salsa in the refrigerator for at least 30 minutes to let the flavors meld together.

Step 11

Serve the salsa with tortilla chips, as a topping for grilled meats, or as a side for your favorite Mexican-inspired dishes.
