  • 80 grams golden syrup
  • 1.5 teaspoons bicarbonate of soda (baking soda)

Directions

Step 1

Prepare a baking tray by lining it with non-stick parchment paper and setting it aside.

In a medium-sized, heavy-bottomed saucepan, combine the granulated sugar and golden syrup.

Place the saucepan over medium heat and allow the sugar and syrup to melt gently, stirring occasionally with a wooden spoon or silicone spatula. Avoid letting the sugar stick to the sides of the pan.

Once the mixture has melted, increase the heat slightly and allow it to boil. Do not stir during this time, but you can gently swirl the pan to ensure even cooking.

Cook the mixture until it reaches a golden amber color and the temperature registers approximately 150°C (302°F) on a candy thermometer. This is the hard crack stage.

Quickly but carefully remove the pan from heat and add the bicarbonate of soda. Immediately stir the mixture briskly but briefly to incorporate the soda. It will foam up rapidly.
