  • 1 teaspoon Salt
  • 2 tablespoons Granulated sugar
  • 0.33 cup Unsalted butter, melted and cooled
  • 1 cup Whole milk
  • 2 large Eggs, beaten
  • 1 cup Shredded cheddar cheese
  • 2 medium Jalapeños, finely diced (seeds removed for less heat)
  • 0.25 cup Fresh cilantro, chopped
  • 1 cup Canned corn, drained
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x5-inch loaf pan and set aside.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, salt, sugar, cumin, and paprika until well combined.

Step 3

In a separate medium bowl, whisk together the melted butter, milk, and beaten eggs until smooth.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and gently mix until just combined. Do not overmix.

Step 5

Fold in the cheddar cheese, diced jalapeños, chopped cilantro, and corn until evenly distributed throughout the batter.

Step 6

Pour the batter into the prepared loaf pan, spreading it evenly with a spatula.

Step 7

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Step 8

Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
