Ingredients

  • 2 cups white or brown rice
  • 4 cups water
  • 1 cup fresh cilantro
  • 2 whole lime
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup red onion
  • 1 cup cucumber
  • 1 cup cherry tomatoes
  • 2 stalks scallions
  • 1 whole jalapeño (optional)
  • 1 clove garlic

Directions

Step 1

Rinse the rice under cold water until the water runs clear. In a medium pot, combine the rice and water, and bring to a boil.

Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until all the water is absorbed and the rice is cooked. Remove from heat and let it cool to room temperature.
