Ingredients

  • 12 oz Pasta (rotini or bowtie)
  • 2 cups Fresh cilantro (stems removed)

  • 0.25 cups Pine nuts
  • 2 Garlic cloves
  • 2 tbsp Fresh lime juice
  • 0.5 cups Olive oil
  • 1.5 cups Cherry tomatoes (halved)
  • 1 Cucumber (diced)
  • 0.5 Red onion (thinly sliced)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Fill a large pot with water and bring to a boil. Add a pinch of salt and cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

While the pasta cooks, prepare the cilantro pesto. In a food processor, combine fresh cilantro, Parmesan cheese, pine nuts, garlic cloves, lime juice, salt, and black pepper. Pulse until the ingredients form a coarse mixture.
