Ingredients

  • 1.5 lbs Boneless, skinless chicken breasts
  • 0.5 cups Fresh cilantro, chopped
  • 0.25 cups Lime juice, freshly squeezed
  • 3 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 Large yellow onion, sliced into rings
  • 1 Red bell pepper, sliced into strips
  • 1 Green bell pepper, sliced into strips
  • 1 Yellow bell pepper, sliced into strips
  • 8 Flour tortillas (8-inch)

Directions

Step 1

In a large bowl, whisk together the cilantro, lime juice, olive oil, minced garlic, cumin, chili powder, salt, and black pepper to create the marinade.

Step 2

Slice the chicken breasts into thin strips and add them to the marinade. Toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Step 3

While the chicken marinates, prepare the vegetables by slicing the onion into rings and the bell peppers into strips.

Step 4

Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken strips and cook for 5-7 minutes, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove the chicken from the pan and set aside.

Step 5

In the same pan, add a bit more olive oil if needed, then toss in the onion rings and bell pepper strips. Cook until the vegetables are tender and slightly charred, about 5-7 minutes.

Step 6

Warm the flour tortillas in a dry skillet or microwave for a few seconds until soft and pliable.

Step 7

To assemble, spoon a portion of the cooked chicken onto the center of each tortilla, then top with the grilled onions and bell peppers.

Step 8

Serve immediately, optionally garnished with more chopped cilantro, a squeeze of lime, or your favorite toppings such as salsa, sour cream, or guacamole.
