Ingredients

  • 15 ounces chickpeas (canned, drained and rinsed)
  • 3 tablespoons tahini
  • 1 cup fresh cilantro
  • 1 medium jalapeño (seeded and chopped)
  • 2 cloves garlic cloves
  • 3 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 cup bulgur wheat
  • 1 cup boiling water
  • 2 cups parsley (finely chopped)
  • 1 large tomato (diced)
  • 0.5 medium cucumber (diced)
  • 2 stalks green onions (finely chopped)
  • 0.25 cup mint leaves (finely chopped)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 4 pieces pita bread (for serving)

Directions

Step 1

Start by preparing the tabouli. Place the bulgur wheat in a heatproof bowl, pour the boiling water over it, cover, and let it sit for 15 minutes until tender. Fluff with a fork and set aside to cool.

Step 2

While the bulgur is soaking, prepare the Cilantro Jalapeno Hummus. In a food processor, combine the chickpeas, tahini, cilantro, jalapeño, garlic cloves, lemon juice, salt, and olive oil.
